Breakfast items or snacks for work can be a challenge. This recipe is a great solution and is pretty easy to follow. It can be adapted to the size of pan your are using. They can also be baked as muffins. Give it a try!
2 cups Organic Flour (Gluten free options work well. You can experiment.)
1 tsp Baking Soda
1/4 tsp Salt
1/2 tsp Cinnamon
1 tsp Ground Flax Seed or Chia Seed
4 Organic Eggs
2 cups or 4 Mashed Bananas
1/2 cup Apple Sauce
1/3 cup Coconut Oil (Warm for easier mixing.)
1 tsp Vanilla
Chopped Walnuts (Optional)
Pureed black or white beans can be added to this to boost protein and fiber content.
Preheat oven to 350-375 depending on your oven. If you are using convection, you will need to shorten your baking time. It is best to keep an eye the first time to determine the best baking time for your process.
Sift the dry ingredients to add air. This is important when using gluten free flour. If you are in a hurry and don’t the recipe will still work.
Mix wet ingredients excluding bananas and nuts. Blend wet and dry ingredients. Once this is complete fold the bananas and walnuts in with a spatula. Don’t over due it as you will break apart the bananas. You can also save a portion of nuts as your topper.
Distribute evenly into the greased tray you have chosen and bake for approximately 45-55 minutes. Larger sizes will require longer times.
